For a fee, > of course... Computist has info on copying the game disk-- you use Copy II Plus and do a manual bit copy for tracks $0-$22 with Sync ON. There seems to be no info on copying other MLB disks. I tried the same method for a Team disk. A few tracks would not copy with Sync ON; I turned it OFF and was able to copy those tracks. The disk seemed to work okay in a test; but, that was for just two teams on the disk-- have not tried them all. So, you may be able to get .nib images of your MLB disks using Saltine's Super Transcopy. If there are snags, you may try turning OFF Sync. The result will be a couple 5.25" diskettes per disk side. These are unprotected and can be converted to .dsk images and transferred. Then, they can be recombined to create a .nib using SST running on an emulator.
